Meltaways



a new cookie we plan on trying 

WARNING this has nuts in it.

1 cup butter, softened
1 cup confectioner sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup finely ground pecans
1 cup confectioner sugar for dusting


In the bowl, beat butter and confectioner sugar until smooth and creamy. Add vanilla.
On low speed, beat in flour and pecans. Wrap dough in plastic wrap and refrigerator 1-2 hours, until firm.

Heat oven to 325°. Pinch off pieces of dough in rounded teaspoonfuls. Roll into logs, taper in and been into crescents. Place on un-greased baking sheets.

Bake at 325° for 19 to 20 minutes until lightly browned.

Remove cookies to wire rack. Sprinkle with a heavy layer of confectioner sugar. Cool completely. 

Sprinkle again with confectioner sugar.
